This vegan lemon ricotta pasta is so comforting. The added spinach gives it a nice earthiness, while the heirloom grape tomatoes give it a burst of life. Of course the lemon is a nice way to lift & brighten the dish as a whole. I recommend serving this pasta dish with a side of garlic bread or maybe a nice salad! This is a great dish for the fall & winter because it’s warm & comforting, but it’s also a nice dish for the warmer months because the lemon & heirloom grape tomatoes are so refreshing.
